Day 2: Holiday Treats

There are many great dishes made during the holidays. You have vegetables, potatoes, stuffing, bread…the list can go on and on.

In my opinion, dessert is the best part of the holidays (^___^)

So today, I would like to share a few of my yummy dessert recipes:

*Apple Crisp

*Spiced Hot Chocolate

*Black Raspberry Tea Cookies

Apple Crisp

Ingredients:


  • 4 medium tart cooking apples, sliced (4 cups)

  • 3/4 cup packed brown sugar
  • 1/2 cup Gold Medal® all-purpose flour

  • 1/2 cup quick-cooking or old-fashioned oats

  • 1/3 cup butter or margarine, softened

  • 3/4 teaspoon ground cinnamon

  • 3/4 teaspoon ground nutmeg
  • Cream or Ice cream, if desired

Preparation:

1. Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening.
2. Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.
3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with cream.
Spiced Hot Chocolate

Ingredients:

  • 2 cups whole milk (Soy milk is also really good!)
  • 1/2 cup golden brown sugar, packed
  • 1/2 cup whipping cream
  • 1/4 cup unsweetened cocoa powder
  • 4 oz chopped bittersweet or semisweet chocolate
  • 1/2 teaspoon ground cinnamon
  • Garnish: whipped cream, cinnamon sticks

Preparation:


1.Whisk milk (or soy), brown sugar, and whipping cream in heavy large saucepan over medium heat until mixture begins to simmer.

2.Reduce heat to medium-low; add cocoa powder, chocolate, and cinnamon; whisk until chocolate is melted and smooth.

3.Pour hot chocolate into 6 demitasse cups.

4.Garnish each with whipped cream and a cinnamon stick.

Black Raspberry Tea Cookies

Ingredients

  • 1/2 cup butter
  • 1/4 cup packed brown sugar
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup miniature semisweet chocolate chips
  • 3 tablespoons white sugar
  • 1 (10 ounce) jar black raspberry jam

Preparation:

  1. Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream butter with brown sugar and 1/3 cup white sugar. Blend in the vanilla and milk. Mix in the flour and corn starch. Stir in the mini chocolate chips.
  3. Form the dough into 1 inch balls, and roll in the remaining white sugar. Place on the prepared cookie sheet, about 1 1/2 inches apart. Use your finger or thumb to press straight down into the center of each ball, making a well for the jam. Neatly fill each cookie with a small amount of jam.
  4. Bake in preheated oven for 13 to 15 minutes, or until cookies are just beginning to turn golden around the edges. Let cookies cool before eating.
